入職にあたって、特に学歴や資格は必要とされない。外食産業は店舗スタッフのパート・アルバイト比率がきわめて高い業種であり、新人採用は毎月のように行われている。パート、アルバイトとして入職し、正社員に登用されるチャンスもある。また、パート、アルバイトであってもパートリーダー等として他のパート等を取りまとめ店長をサポートする役割を担う場合もある。店長として採用される場合には、「防火管理者」や「食品衛生責任者」といった資格が必要な場合もある。一般社員で入職した場合でも奨励制度を利用して資格取得し、店長になることが可能である。
　入職後は新人・アルバイトを含むすべての店員がOJT教育の一環として、職場の規則や接客等に関する基礎知識を学習する。また、入職時に集合研修に参加することもある。
　食品衛生に対する知識やマニュアルを理解し実践する力、客との円滑なコミュニケーションを図る接客能力、チームワークを保ちながら働けることが重要である。
