栄養士になるには、厚生労働大臣の指定した栄養士養成施設を卒業し、都道府県知事に申請し免許を受ける必要がある。
管理栄養士になるためには、栄養士免許を取得した後、養成施設と実務経験を合わせて5年（4年養成施設の場合は実務経験が1年、3年養成施設の場合は実務経験が2年、2年養成施設の場合は実務経験が3年）以上経てから管理栄養士国家試験に合格しなければならない。ただし、管理栄養士育成施設（修学4年）を卒業した者は栄養士免許を取得後すぐに管理栄養士国家試験を受験できる。
栄養について豊富な知識を持ち、新しい食品や健康に関する情報に絶えず関心をはらうこと、食事のあり方や食生活の内容などについて、わかりやすく指導・助言する能力などが必要である。
就職後も知識や技術の研鑽は欠かせないため、研修などを通じて専門性を深めていく。日本栄養士会では、「臨床栄養」、「学校栄養」、「健康／スポーツ栄養」、「給食管理」、「公衆栄養」、「地域栄養」、「福祉栄養（高齢者・障がい者）」、「福祉栄養（児童）」の８つの分野で「認定管理栄養士」「認定栄養士」を認定している。この他、特定保健指導やスポーツ栄養など５つの特定分野で認定する「特定分野管理栄養士」、がん患者、糖尿病患者等に対応する「専門管理栄養士」などの資格もある。
認定を受けることで、それぞれのテーマに対して専門的技術、知識を実践レベルで習得している栄養士、管理栄養士であることを示すことができる。
