入職にあたって、特に学歴や資格は必要とされない。
　新規学卒者は調理師学校等からの紹介が多い。中途採用は、ハローワークや求人広告等による募集が多い。パート・アルバイトの募集も多くなっている。
　給食調理員は、特定多数の人々に継続的に食事を提供する仕事なので、衛生観念が最も必要となる。また、数食から1,000食以上まで様々な量の食事を提供するため、それぞれに応じた道具や機械を正確に操作する能力も必要になる。
　事業所給食等であれば、入職後１年程度でひと通りの仕事は覚えられるが、特殊な調理を必要とする病院給食や介護施設等の給食では３年程度の経験が必要になる。
　調理師、専門調理師や栄養士の資格を取得し、調理主任・給食施設の責任者などになる道もある。
　関連資格としては、厚生労働省の技能検定の「調理技能士」がある。
